not sure how we forgot to mention backups recently but in our environment we have been using Cobian Backup since it replicates data and we can turn off a data store and almost instantly turn to the backup data.

one of the techs came across a neat tool a while back from spiceworks.com that does network inventory, software inventory, hardware monitoring, exchange monitoring and all kinds of cool stuff.
they also have a community offering a great deal of knowledge on just about any topic and are a very helpful group as well.
